For all those moms out there...or just hungry people:

I was trying to decide what to make for lunch today for Zach, and I remembered one of my favorite lunches from when I was younger. I thought I'd pass it along since it's easy, healthy and REALLY good!

Avocado on Toast:

- Toast one slice of bread
- Butter it lightly (optional)
- Top the bread with slices of avocado
- Use a fork to mash up the avocado - spread evenly over the bread
- Pour a small amount of olive oil on the top
- Lightly salt and pepper to taste.

It was a hit with Zach - and I know it's good for him. Enjoy!

Awesome idea! I'll have to try it with Gabi. Getting the veggies in with her is treacherous!
